Packaged Commercial Cookery and Hospitality Program
The Commercial Cookery and Hospitality program contains three Australian Nationally Recognised qualifications that must be completed in sequence; the qualifications are:
1. Certificate III in Commercial Cookery
This qualification is essential for recognising a cook's trade. It represents the role of individuals with a broad array of advanced culinary skills and a solid understanding of kitchen operations to prepare various food and menu items. Students will develop the ability to exercise discretion and judgment, working independently under minimal supervision while utilising plans, policies, and procedures to direct their tasks. Completing this course opens the door to employment opportunities as a cook in restaurants, hotels, clubs, pubs, cafes, and coffee shops.
2. Certificate IV in Kitchen Management
This qualification represents the position of chefs and cooks who take on supervisory or team-leading responsibilities in the kitchen. They work autonomously or with minimal guidance, exercising their judgment to address non-routine challenges. Earning this qualification opens doors to employment in various establishments, including restaurants, hotels, clubs, pubs, cafes, and coffee shops, or allows individuals to manage a small business within these industries.
3. Diploma in Hospitality Management
This qualification represents highly skilled senior operators in hospitality who combine diverse skills with managerial knowledge to oversee operations. It prepares individuals for roles as departmental or small business managers across various sectors, including restaurants, hotels, and cafés. The qualification supports multiskilling and specialisation in areas like accommodation services, cookery, food and beverage, and gaming.
Entry Requirements
The Commercial Cookery and Hospitality program requires prospective students to have completed the following to ensure success in the course
- Have completed high school (Year 11 equivalent) and passed
